     A Cardinal House   

 

One of the personal touches available at A Cardinal House to make your special day magical and memorable is our signature Hors d'oeuvre Reception.  Our professional chef, Kevin, will dream up a variety of delicious gourmet morsels to individualize your reception while taking advantage of seasonal specialties and accommodating special requests.

 

Each reception has, as a minimum, a selection of six different gourmet items specially prepared by Chef Kevin and served to your guests in any of our first floor common areas by our personable staff.

 

There is no set list of hors d'oeuvre selection; Kevin uses his artistic talent to create a special combination for each event, keeping in mind special requests as well as dietary restrictions.

 

Some of the selections that have been prepared for A Cardinal House receptions in the past are showcased here to give an idea of the various types and range of food items.

                                              

 Shrimp Shui-Mai with a ginger soy dipping sauce

  Tender shrimp blended with Asian spices wrapped in

  a soft won ton dumpling and steamed in a bamboo 

  wok to bring out the flavor of the spices.                 

                            

                             Spinach Puffs

    Garden-fresh spinach, onions, garlic, cream cheese,

    spices and feta cheese wrapped together in bite-size

    triangles of light, flaky phyllo dough.

  Mini Beef Wellington

      Elegant beef tenderloin medallions blended with a

      flavorful shitake, oyster and domestic mushroom

      cream duxelle.  Finished with shallots, thyme,

      garlic and a hint of sherry wine wrapped together

      in a delicately delicious French-style puff pastry.

 

                                                         

Indonesian Skewered Chicken with Peanut Sauce 

 Tender strips of chicken marinated in an Indonesian

 mixture of herbs and spices, grilled and served with

 a sweet peanut dipping sauce.

 

 

 

 

 

Smoked Chicken Quesadilla

  A delicious combination of chunks and shredded

  chicken, mild cheddar, Monterey Jack cheese and

  spicy jalapeno peppers blended with tomatoes, red

  yellow and green bell peppers, cilantro, onions and

  a touch of garlic and then wrapped in a tortilla.

 

 

 

                                                                             Bruschetta

       Quality Italian meats, such as prosciutto, thinly

       sliced, laid over a toasted cristini and covered

       with a Mediterranean salsa and finished with

       sliced buffalo mozzarella.

    

 

 

 

      Mini Beef Pies

        Small puff pastry crescents stuffed with herb-

        seasoned beef.  Could also be stuffed with

        chicken, seafood or vegetables.

     

 

 

 

                                                           Mini Lobster Frittata's

                    Fresh lobster pieces and cream cheese

                    baked in a crustless quiche.

 

 

 

 

 

 

      Hibachi Beef Skewers

          Marinated tenderloin of beef wrapped around

          sauteed peppers, onions and cheese, then

          skewered and grilled to perfection.

 

 

 

 

                                                 Coconut Encrusted Tilapia

          Fresh fillets of mild, white Tilapia fish encrusted

          with coconut, skewered and flash-fried and served

          with lemon aioli dipping sauce.

 

 

 

 

 

      Seafood Seviche

          Marinated seafood with a Spanish influence

          served in a corn tortilla shell

 

 

 

 

 

                                                                      Pesto Shrimp

                  Basil pesto marinated shrimp pan seared

                  and skewered.
